Chicken and Broccoli Gratin

A very good friend of mine is trying to eat healthier and I started thinking to myself… I am too dang old to not be eating healthy.  So, I am back on the bandwagon again. I rejoined Weight Watchers and have been on the lookout for healthy recipes or recipes that I can makeover to be healthier.  Last night, we had this delicious Chicken and Broccoli Gratin… at only 5 SmartPoints™ and 165 calories per serving, you can’t go wrong with this one!  Enjoy!

Chicken and Broccoli Gratin

1 pound boneless, skinless chicken breasts

2 packages steamer-bag type frozen broccoli cuts

2 cans 98% fat-free cream of chicken soup

1/4 cup Italian-seasoned bread crumbs

1/4 freshly grated Parmesan cheese

2 teaspoons Creole seasoning, optional

1 teaspoon salt

2 teaspoons black pepper

1/4 cup evaporated milk

Saute chicken in a large, non-stick skillet (add a little bit of water, as needed to ensure the chicken does not burn) until juices run clear and internal temperature of the chicken is at least 165°F.  Meanwhile, steam broccoli in microwave according to package directions.   Preheat oven to 350°F.  Cut chicken into bite size pieces and return to skillet; season with Creole seasoning, salt and pepper.  Stir in broccoli, cream of chicken soup and evaporated milk until combined well.   Pour into a 13 x 9″ baking dish prepared with baking spray and spread evenly.  Sprinkle with bread crumbs and Parmesan cheese.  Bake, uncovered, in the oven for 15 – 20 minutes (or until bread crumbs are lightly browned.)
