Easy White Chicken Chili
Today’s recipe for easy white chicken chili is so easy and perfect for a chilly night or when you don’t have time to throw together a full meal. I love when recipes are quick and easy – almost faster than going through the drive thru for fast food. Plus, white chicken chili is a perfect “belly warmer” when it is cold outside. With very few ingredients – most you might already have on your pantry shelves – you can have this delicious chili on the table in a matter of minutes.
And, not to brag, but this amazing chili might have won a chili cook-off a time or two. Serve with some crusty garlic bread or rolls and crackers – dinner is served.
Easy White Chicken Chili
Ingredients
- 2 bricks low fat cream cheese cut up.
- 2 cans Rotel drained
- 2 chicken breasts cooked and diced into bite sized pieces
- 2 cans chicken broth
- 1 can corn drained
- 2 teaspoons black pepper
Instructions
- Combine all ingredients into a large pot. Stir to combine.
- Heat on medium-low heat for 15 minutes, until heated through. Stir occasionally to ensure cream cheese melts to a creamy consistency.
- Serve with crackers.
