Baked Whole Wheat Strawberry Donuts

I love fresh strawberries and fresh blueberries.  I am always trying to find new ways to use them.  Last year, while in Amish Country, I bought a doughnut baking pan at Lehman’s.  Brought it home and promptly forgot about it.  I came across it the other day and thought… hmmmm… strawberry donuts.  So, today’s recipe is Baked Whole Wheat Strawberry Donuts.  Reminiscent of my whole wheat blueberry muffin recipe, it makes a quick breakfast or a delicious treat.  While not on the low end of the SmartPoints(tm) scale, it is a nice treat and a somewhat healthier splurge.

Baked Whole Wheat Strawberry Donuts

1-1/2 cups whole wheat flour

3/4 cups + 2 Tablespoons white sugar, divided

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup canola oil

1 egg

1/3 cup milk

1/2 – 3/4 cup natural applesauce

1 cup strawberries, hulled and diced

Preheat oven to 400 degrees.  Spray doughnut pan with baking spray.  Toss strawberries with 2 Tablespoons sugar, mixing until coated.  Set aside.  In large bowl, mix together flour, sugar, salt and baking powder.  In separate bowl, mix oil, egg, milk and 1/2 cup applesauce until smooth.  Slowly, add liquid mixture to flour mixture, stirring continuously.  Continue stirring until just moistened.  Add up to an additional 1/4 cup applesauce to make the batter thick (similar to brownie batter).  Gently, fold in strawberries until incorporated.  Spoon mixture into the doughnut pan, stopping just below the lip of each indention.  Bake at 400 degrees until golden brown, approximately 20 minutes.  Using a tooth pick, test the center of each doughnut.  When the toothpick comes out clean, the donuts are done.  Remove and allow to cool on a baking rack before removing from pan.
