Crockpot Chicken Cacciatore
Our Crockpot Chicken Cacciatore is comfort food at it’s best. You can throw some of the ingredients in the Crockpot in the morning, add a few more in the evening and dinner is served. And, trust me… this is one of those dishes that are even better the next day! Enjoy!
Crockpot Chicken Cacciatore
1 lb skinless, boneless chicken thighs
1 medium onion, diced
8 ounces fresh sliced mushrooms
1 large can diced tomatoes in juice (28 oz)
2 cans tomato paste (6 oz each)
1 can tomato sauce (14.5 oz)
2 Tablespoons Italian seasoning
salt and pepper, to taste
hot, cooked noodles
grated Parmesan cheese
Place chicken in bottom of Crockpot. Top with onions and mushrooms. Season with salt and pepper. Top with tomatoes and juice. Cook on low for 6-8 hours. Drain excess juice. Shred chicken with two forks. Add tomato paste and Italian seasoning. Stir to combine. Allow to heat for 15 -20 minutes in Crockpot. If too thick, add tomato sauce a little at a time until it is the consistency you desire. Serve over hot noodles, topped with grated Parmesan cheese. Serves 4.
